The Originality of Pag Cheese
The 'Association of Paški Sir' was founded in 2005, which brings together all of the major producers of Paški Sir on the Island, with the aim of protecting the authenticity of Paški Sir and obtaining Protected Designation of Origin.
Protected Designation of Origin (PDO) can be achieved if there has been a tradition of production through a specific historical period, and the production is in a specific geographical region. In fact, climate, soil type, location, natural vegetation, the cultivation of certain plants of the region, and the methods and conditions of keeping and breeding the animals all differ between every cheese that is produced around the world. Besides these factors, the tradition, skills and experience handed down from generation to generation is crucial in the recognition of PDO.
The 'Association of Paški Sir' is responsible for applying for PDO, as Paški Sir meets all of the requirements. Paški Sir is produced using the same artisanal methods as in historical times. The skills and knowledge are passed from generation to generation, and the production of milk and of Paški Sir is from a clearly defined region (Island of Pag). Cheese is a typical product of the region and has its own originality and authenticity. The specific characteristics of Paški Sir are determined by the autochthonous sheep of the island, and the flavour by the specific vegetation and natural ways of feeding and grazing.
Between the Protection of Geographical Indication (PGI) of Paški Sir and a traditional reputation, which could also protect Paški Sir, the PDO is the most valuable. In Europe, the PDO and PGI protect more than 600 agricultural products and foods. Although the types of protected products differ, they share the importance of being protected at a national and international level.
